The most addictive cheese I have ever eaten. It is unlike anything I have had before. Probably goes good with pears or something, but I prefer it plain, by itself.

This is a bit like Parmesan - hard and salty - but with a richer, nutty flavor I just love. It's perfect in thin slivers over your favorite Italian dishes, and lends them a new depth.

This is my absolute favorite cheese. I can have this plain, with granny smith apples, or as a panini with arugula and sundried tomatoes. If you haven't tried this yet, please do.
For the best caesar salad ever, grate manchego chese instead of parmesan. I could eat it every day. Also recommended to add a meat: shrimp, salmon or chicken.
